Throughout the world this naturally wonky root vegetable has many names and is used in many different ways. Most of us prefer the orange one, on Curacao we grow the lighter variety of sweet potato, Batata Dushi, which tends to be a bit more floury in texture.
Delicious and affordable, sweet potatoes provide a multitude of health benefits as sweet potatoes are rich in complex carbohydrates, dietary fiber and beta-carotene as well as vitamin B5, vitamin B6, vitamin C and manganese.
It’s not only the root which is edible, the leaves of the sweet potato plant are rich in antioxidants and contain high levels of vitamin A and C.
Last Saturday we explored the locally grown sweet potato and it’s leaves. Although there are many different ways to enjoy this root veg, this sure was a lovely one (incl the greens!).
