Such a delicious and healthy way to get your crunch craving going, without the guilty feeling 😉
What you’ll need for the falafel for 4 persons:
– 1 can chickpeas, drained
– a bunch of spring onions
– a bunch of fresh coriander
– 1 garlic clove
– 1 fresh chilli or 1 teaspoon Badia chilli powder, optional
– 1 egg
– 3 tablespoons tahini paste
– ¼ cup flour
– ½ teaspoon baking powder
– Lime zest and juice
– Salt and pepper to taste
– 1 teaspoon Badia ground cumin
– 1 teaspoon Badia ground coriander
For the yoghurt sauce:
– Plain yoghurt
– Lime juice
– 1 garlic clove
– salt and pepper to taste
– fresh coriander
Blend all the ingredients together in a foodprocessor, the mixture should be smooth with a few chunks. Store the mixture in the fridge for about 15 minutes.
Get your frying pan ready on the stove, on moderate heat. Add a good bit of Badia Olive oil to the pan, allow to heat up.
Take a spoonful of mixture and gently add it to the pan. Once it is in the pan you can gently squash it a bit to flatten the falafel. You can do about 3 or 4 spoonfulls at the same time.
In the mean time, get your yoghurt sauce going:
Add about 5-6 spoons of plain yoghurt, add 1squeezed garlic clove to the yoghurt, some salt and pepper to taste, a squeeze of lime juice and some freshly chopped coriander.
Heat up your pita bread, slice it open and add a bit of the yoghurt sauce, followed by some greens like alfalfa sprouts and of course the falafel, finish it off with some more yoghurt sauce.
You can also add some finely chopped cucumber and tomato pieces to your falafel, or try some finely grated radish.
