Chilli con or sin carne, either way this is just another comforting meal packed with goodness.
What you’ll need for 4 persons:
– 2 cans of your favorite beans, in this recipe I used kidney beans and black beans
– 1 onion, diced
– 1 celery stick, diced
– 2 garlic cloves, finely chopped
– 1 red paprika, diced
– 1 can of whole corn
– 1 hot and fiery chilli, finely chopped
– 1 teaspoon Badia ground cumin
– 1 teaspoon Badia ground coriander
– ½ teaspoon Badia paprika
– ½ teaspoon Badia cinnamon
– 1 teaspoon Badia oregano
– 2 cans of Hunt’s dices tomatoes
– salt and black pepper to taste
– fresh coriander to garnish
– I added some fried plantain to my chilli, it gives a bit of a sweet touch, baked fresh pineapple is also very nice!
Con Carne:
– 400 gram lean beef mince
– 1 egg
– 1 teaspoon Badia ground cumin
– 1 teaspoon Badia ground coriander
– ½ teaspoon Badia ground nutmeg
– 2 handful breadcrumbs
– salt and pepper to taste
Mix all the ingredients together and make small little meatballs.
Put a heavy bottom pan on a medium heat on the stove, add a generous amount of Badia olive oil to the pan and gently add the meatballs. Keep the meatball moving in the pan, to prevent sticking.
Allow the meatballs to brown and when they’re cooked through you can remove the meatballs from the pan and set aside. Continue with Chilli sin carne recipe, cook in the same pan.

Put a heavy bottom pan on a medium heat on the stove, add a generous amount of Badia olive oil to the pan and gently add the diced onion, celery, garlic and red pepper.
Give it all a bit of a stir and cook it for about 5 minutes.
Add the spices to the vegetables: the cumin, coriander, paprika and oregano and give it all another good stir. Add a little more olive oil if you find it to be too dry.
Add the tomatoes, give it a stir to combine the spices and turn the heat down to a simmer. Let the tomatoes reduce for about 10 minutes before you add the beans and corn. Let the beans heat through and add your meatballs to your chilli.
Serve with some super simple guacamole and sour cream, and even some of your homemade(-ish) nachos.
